Use a light coloured pan to brown the butter so that you can take it right off the heat once you see brown (not black!) specks appearing. If you love some nutty flavour in your matcha brownie recipe, this is right up your alley!
Cool the matcha ganache slightly to slightly warm temperature before adding it to the batter. You don't want to risk cooking the eggs!
Whisk eggs and butter thoroughly to incorporate air pockets — till a pale yellow colour.
The color depends largely on the grade of matcha you use. We used Patissier grade matcha, which is a culinary matcha intended for balanced bakes. Try mixing it with Barista grade matcha to get a much more vibrant green color than culinary matcha which tends to be more muted in color.

An aromatic twist to classic chocolate brownies - Fudgy Brown Butter Matcha Brownies!
This delicate treat is the perfect balance between the earthy notes of matcha and overpowering sweetness of chocolate. Your 2-in-1 crowd-pleaser for a casual party or cozy hangout.
Unlike typical recipes, we browned the butter to nail that rich, nutty flavour to make the taste extra memorable.
Paired best with a cup of warm tea and strawberries.

114g melted white chocolate
114g melted unsalted butter
3 eggs
3 tbsp Patissier Uji Matcha Powder
200 g granulated sugar
50 g brown sugar
1 tsp vanilla extract
120 g all-purpose flour
1/2 tsp salt
Brown the butter: heat butter over high heat until it melts, then lower the heat. Continue heating until small brown bits start to appear.
Make matcha chocolate ganache: melted white chocolate and matcha powder
Whisk sugars and eggs together till thick and creamy.
Stream in matcha chocolate ganache into creamed butter and sugar mixture. Whisk till uniformly green batter.
Fold in sifted flour till uniformly green batter.
Pour batter into 8x8 lined baking tray.
Preheat oven to 176 ºC.
Bake the matcha brownies for about 20-30 minutes.
Remove from oven and cool for 8-10 minutes.
Assemble by dusting powdered icing sugar on the top of the matcha brownies.
Add favourite toppings, slice to enjoy!

the flavour is very similar to freeze dried strawberries. not your typical usual strawberry matcha but nonetheless still an easy way to get a quick strawberry matcha fix!
